Ingredients

All you need are four simple ingredients to make great-tasting brown sugar carrots. Here’s a look at the ingredients, check the recipe card for the quantities of each.

  • Baby carrots: You can use fresh or frozen carrots. Fresh garden carrots will cook faster than store-bought carrots.
  • Butter:I like to use unsalted butter so I can control the saltiness, but any butter will do.
  • Salt: Just a dash of salt to bring out the flavor of the carrots. If you’re using salted butter you might want to taste the carrots before adding it.
  • Brown sugar: Brown sugar has more flavor than regular sugar and is the best part of these carrots.
  • Ground cinnamon: This is the “secret” ingredient that makes these carrots the best.
  • Water: Just a little water is needed but enough water needs to be used so that the Instant Pot doesn’t give you a “burn” message.

Tips & Variations

  • Swap the brown sugar. You can use maple syrup or honey with great results.
  • Mix things up. Add more root vegetables such as parsnips, potatoes, and golden beets all work well!
  • Add nuts. Sprinkle the carrots with some pecans or walnuts just before serving.
  • Release the pressure right away. Don’t let your pressure cooker release the steam naturally, this will result in overcooked carrots.

No, you don’t need a steamer basket to make glazed carrots in your Instant Pot.

Can I make steamed carrots on the stovetop?

Yes, you can steam carrots in a pan with all the same ingredients.

Can I use regular carrots instead of baby carrots?

Yes you can. Just make sure the carrots are cut into similar-sized pieces. This will ensure they cook in an even amount of time.

Leftovers & Storing

  • Store. Leftovers in an airtight container in the fridge for 2-3 days. I do not recommend freezing them.
  • Reheat. In a pan on the stove or the microwave. You may want to add a bit of water if they seem dry and cook until heated through.

FAQs

Should you boil carrots before roasting? ›

What are glazed carrots made of? ›

Glazed carrots coated in a mixture of brown sugar and butter are a versatile side dish you can serve alongside a weeknight meatloaf, a Sunday ham, or your Thanksgiving turkey. These caramelized carrots are a definite kid-pleaser but they're elegant enough to impress the adults as well!

How can I enhance the flavor of carrots? ›

Slice or keep them whole if baby sized and toss with salt and pepper as your most basic preparation, or optionally add garlic, dill or honey to change it up. Roast on a baking sheet at 400 degrees until tender. So, so, so sweet!

How many minutes does it take to soften carrots? ›

Are carrots better boiled or roasted? ›

Roasted carrots have the best texture, and the flavor is amazing. Roasting draws out the natural sweetness and you get a nice caramelized flavor. They're so much better than boiled carrots! Roasting is also easy; it's hard to overcook a roasted vegetable: if it gets too done, it's clearly burned.

Why are my roast carrots soggy? ›

As they cook, vegetables give off moisture, and when arranged too close together it results in a soggy outcome. Follow this tip: To achieve beautiful browning and crisp, roasted perfection, vegetables need some breathing room. Arrange vegetables in a single layer and don't overcrowd the pan.

What makes carrots more tasty? ›

Seasoning carrots is a great way to help bring out their flavor. For a simple and versatile seasoning, stick with salt, pepper, and garlic. For an herbier taste, add rosemary, parsley, cumin, or coriander. Or, to bring out their fresh, woody flavor, add some anise.

How to take bitterness out of carrots? ›

To decrease the bitterness, the carrots must be cooked for longer. The best technique is to fry and steam them at a low temperature.

Can you overcook carrots? ›

You should keep a watchful eye on blanching vegetables like carrots as they boil, setting a timer and having an ice bath ready to shock them the moment the timer rings. If you don't transfer them to an ice bath right away, they'll continue to cook, resulting in overcooked, dull, and flavorless carrots.

Does microwaving carrots soften them? ›

Microwave the carrots on high for 3-5 minutes or until tender. Cooking times may vary depending on the power of your microwave and the size of the carrot pieces, so keep an eye on them to avoid overcooking. Higher wattage microwaves will cook the carrots faster, as will smaller carrot pieces.

What does soaking carrots do? ›

Instead of simply tossing carrots in the vegetable drawer, take a few minutes to cut off the greens and submerge the carrots in water. You'll be rewarded with carrots that stay crisp for weeks, not days.

No, it's not necessary. However, many nutritionists say that cooking them (not boiling them to mush) makes the nutrients more accessible. I don't know, I just like them either way. However, when I was a child (I'm now 82), my grandmother had a way of cooking carrots that was anything BUT healthy!

Why are my carrots not roasting? ›

The Oven Temp Is Too Low

A low-and-slow cooking technique is excellent for vegetables like carrots, beets or potatoes that you plan to puree into soup. But, they'll turn out soft and soggy instead of crispy and caramelized. The solution: Turn the oven temperature up to 400°F to 425°F.

Should carrots and parsnips be parboiled before roasting? ›

Some cooks like to parboil hearty vegetables like parsnips and carrots before roasting them so that the oven can quickly brown the exterior. However, we find that by roasting vegetables in a 425℉ oven, they'll become perfectly tender on the inside and evenly browned on the outside.
